We did this in the instant pot but could easily be done on a stove top just cook until the cauliflower is super tender.
1/2 sweet onion chopped small
2 TBS butter
Sauté the onions in the butter
Add one bag chopped cauliflower florets
Add 3 cups chicken stock
1 tsp garlic powder
1 tsp Himalayan salt
Seal in the instant pot
Cook on HIGH PRESSURE for 5 minutes then release.
Once done use an immersion blender or add to a food processor (make sure the cauliflower is super soft) and blend til smooth
