INGREDIENTS:
* 4 Chicken breasts
* 1 13oz bag of pork skins
* 1 tsp onion powder
* 1 tsp garlic powder
* 1/3 cup grated Parmesan
* 1 tsp oregano
* 2 large eggs
* 1-2 cups of low carb marinara sauce
* 1 cup of mozzarella
* 1/2 cup of shredded Parmesan
* 1 TBS Italian seasoning
DIRECTIONS:
1. In food processor crush pork skins and blend with onion powder, garlic powder, oregano, and grated Parmesan
2. Beat 2 large eggs and add them to a shallow dish
3. Add pork skin mixture to another shallow dish
4. Take chicken breasts and cover in beaten egg then generously coat with the pork skin mixture and place into the air fyer basket
5. Place in the air fryer on 400 for 15-20 minutes flipping half way.
6. Preheat oven to 400 degrees for the next step
7. Before removing from the air fryer check the internal temp of the chicken using a meat thermometer (165 or higher)
8. In an oven safe dish or pan spread the marinara in the bottom.
9. Place chicken in the sauce
10. Top the chicken with the shredded mozzarella, shredded Parmesan, and Italian seasoning.
11. Place in the oven for 12-15 minutes or until the cheese is bubbling and browned.
